What to look for

  • Bare cast iron seasons and is repairable forever; enameled cast iron never needs seasoning but chips, and a chipped enamel pot cannot be restored.
  • Check the lid fit and whether the underside has drip rings — that is what bastes a braise instead of letting it dry out.
  • A loop-style helper handle matters more than it sounds: a 7-quart pot full of stew is a two-hand lift out of a hot oven.
  • Oven-safe temperature is set by the knob, not the pot. Metal knobs go to any temperature; phenolic ones cap out around 400°F.
