What to look for
- Full tang, visible along the top and bottom of the handle, is the structural difference between a knife you sharpen for thirty years and one whose handle loosens.
- Stainless at 56-58 HRC is the sweet spot for a kitchen: hard enough to hold an edge through a week of prep, soft enough to sharpen on a basic stone.
- American cutlery is largely stamped rather than forged, which is not a flaw — a thin stamped blade cuts better than a thick forged one and costs a third as much.
